Picked ginger at sushi restaurants is called Gari in Japanese.
The purpose of Gari is cleaning mouth between fish and fish.
But American people don’t know this fact and they eat a lot.
They like something free, Soy sauce is free, wasabi is free, and ginger is free.
So, they use them a lot.

Our supplier told me this morning.
Pink ginger / They use pink color to make pink.
Beige ginger / They use bleach to make this color.

So, which one is better?  None of them. It is fine even if you eat a lot. You don’t go to hospital.
But eating too much is not good for you, anyway.
