Taka Update April 28, 2013

Fish delivery and more

It is not easy to get good tuna always. I did not get any good one last week. So, I did not send this newsletter. In addition, uni supply was also not great. We had it at beginning of the week. And there was no uni after that. I will get uni on Monday but tuna supply is still same, very negative.

It was rain and could not play golf on Sunday morning. We could play because of a little rain but we worried about condition and catching cold.

Business is good.

Thank you for dining. Our April sales are 8% higher than last year. This number is not bad at all. We have to make sales, we have to make profit. We have employees, we have to renovate always, and we cannot anything without making money. We focus delicious and healthy food, better services, and nice atmosphere.

A couple of restaurants in Atlanta closed. Peasant Bistro in downtown and Barca tapas in Buckhead were closed recently.

Base of Tonkotsu ramen


I bought Tonsoku, Pork Feet the other day
I cooked meat and served.
So, this is the broth from Pork Feet.
Tonkotsu Ramen is very popular in NYC area.
And my question is why American people suddenly started to eat this kind of greasy food.
As I know try to avoid to eat fat part of meat,
Asian people like chicken feet, chicken skin, pork skin, pork feet and more.

I know American people like Hamachi, Toro, Salmon. Those are all fatty fish and high calorie
I personally like meat fat, it makes nice broth.
But greasy ramen is too much for me.
It is OK if I eat monthly.
Maybe people like to eat but they don’t want to see behind the scene.

A Truth Of Ginger


Picked ginger at sushi restaurants is called Gari in Japanese.
The purpose of Gari is cleaning mouth between fish and fish.
But American people don’t know this fact and they eat a lot.
They like something free, Soy sauce is free, wasabi is free, and ginger is free.
So, they use them a lot.

Our supplier told me this morning.
Pink ginger / They use pink color to make pink.
Beige ginger / They use bleach to make this color.

So, which one is better?  None of them. It is fine even if you eat a lot. You don’t go to hospital.
But eating too much is not good for you, anyway.
