After cooking

I showed you pork belly and chicken gizzard the other day.
And this picture is after that.
It takes 2 days to make perfect slow cooked pork belly.
I cooked chicken gizzard about 5 hours to make soft.
Then, I made tempura style.

It is hard to sell this kind of food at sushi restaurants. I just made these because of convention demand.

And I like these foods personally.

Origami Expert Makoto Yamaguchi to Give Workshop

The Consulate General of Japan and Savannah College of Art and Design (SCAD) Atlanta are partnering to present a demonstration and workshop by renowned origami expert Makoto Yamaguchi and his assistants, Eiko Matsuura and Kyohei Katsuta. Born in Tokyo in 1944, Mr. Yamaguchi has been a professional origami artist since 1973, when he worked at the Nippon Origami Association. In 1989, he established a gallery called “Origami House,” which has become a headquarters for the training of young origami artists and a showcase for the work of Japanese and international origami creators. He is the head of the Japanese Origami Academic Society secretariat, a member of the Nippon Origami Association, a life member of OrigamiUSA, and a member of the British Origami Society. He is the editor-in-chief of “Origami Tanteidan” magazine, which he created in 1990, and the author of more than 80 origami books in both Japanese and English. Mr. Yamaguchi is also the creator of “Origami Caravan,” a humanitarian effort for the children in the Sendai area affected by the March 11, 2011 earthquake and tsunami.

Chicken Gizzard and Pork Belly

I was Watching Food Channel last night. And I saw come restaurants cooked chicken gizzard. I thought this is only for Asian. I have chicken Gizzard ponzu sauce, means fried and ponzu sauce.  But I cook it this first and make tempura.

Taka Update January 25, 2012

Fish delivery and more

Bad weather in Japan effects some fish delivery. Seki Aji is no coming this week. Sayori, Iwashi are not available so far. I am not sure tomorrow delivery.

Tokyo got 1 inch of snow yesterday and the city was panicked. It is same as Atlanta. People in Tokyo are not familiar with snow and a few inches of snow makes everything bad.

Tuna supply is back to normal, means bad normal. Toro is also same.

Weight Control and Golf

I am trying to lose weight but am keeping same weight. Our business is really good and hard find the time to work out.

Golf? I shot 97 last Sunday. Can I excuse? Bad weather, bad condition, I will go back to revenge this Sunday. It will be 55F high and sunny. I expect sunny in my golf mind.

Good business in January

Our business in January is really good. I expect the new sales record in January. 6 more days and need to make it. Making number is XTC.

10 years Anniversary night is coming in a month.

I opened TAKA Sushi on February 19th 2002. Yes, this is our 10 years anniversary is coming very soon.

Of course, we do crazy specials as usual. Let’s celebrate our 10 years anniversary.

Actually 19th is Sunday this year, I need to play golf on Sunday and do this on Monday. I name it Monday Night Anniversary. I show you more detail later.
